Which is your favorite type of honey for home-brewing beer (most recipes)?

What type of honey would you choose if a particular homebrew recipe didn’t specify? Clover, orange blossom, or alfalfa honey? How does mesquite honey differ?

Beer or Mead? In any case the type of honey will affect the flavor of the product. Orange Blossom would impart a citrus like flavor where mesquite would create smokey tones.

Store bought honey can be real slow to ferment so I prefer to use local honey that is non filtered. It’s the best.
